Try this easy and hearty Blackstone stir-fry made with sausage, potatoes, and fresh veggies—perfect for a quick weeknight meal.
Ingredients
- 3 lb Russet Potatoes, thinly sliced
- 1 Medium White Onion, chopped
- 4 Garlic Cloves, minced
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Paprika
- 1 tsp Parsley
- 3 tbsp Oil
- 2 lbs Kielbasa Sausage, chopped
- 2 Medium Zucchinis, chopped
- 1 Red Bell Pepper, chopped
- ½ cup Italian Dressing
Instructions
1. In a large bowl, combine potatoes, onion, garlic, salt, pepper, oil, paprika, and parsley.
2. In a separate bowl, mix sausage, zucchini, bell pepper, and Italian dressing.
3. Preheat the Blackstone griddle to medium-high.
4. Spread the potato mixture in a single layer. Cook for 5 minutes, flip, and cook another 5 minutes.
5. Add the sausage and veggie mixture. Mix well and spread evenly.
6. Cook another 5 minutes on each side until golden and cooked through.
7. Remove from griddle and rest a few minutes. Optionally, top with a fried egg or hot sauce.
Notes
Cut ingredients to uniform size for even cooking.
Serve with a fried egg for extra richness.
Drizzle hot sauce or balsamic glaze for added flavor.
