Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts, thinly sliced Look for fresh, plump chicken breasts for the best texture.
  • 1/4 cup teriyaki sauce Opt for a low-sodium version if you're watching your salt intake.
  • 1 tbsp sesame oil (divided) Use half for marinating and half for preparation.
  • 1 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
For the Slaw
  • 2 cups coleslaw mix (cabbage and carrots)
  • 2 pieces green onions, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp honey
For the Tacos
  • 12 pieces wonton wrappers Ensure they are fresh for optimal crunch.
  • 2 tbsp sweet chili sauce Drizzle for added flavor.
  • 1 tsp sesame seeds For garnishing.
  • 2 tbsp chopped cilantro For garnishing.

Method
 

Preparation
  1. In a bowl, mix the thinly sliced chicken with teriyaki sauce, 1/2 tablespoon of sesame oil, soy sauce, minced garlic, and grated ginger. Allow the chicken to marinate for at least 10 minutes to absorb those robust flavors.
  2. In a separate bowl, combine the coleslaw mix with sliced green onions, rice vinegar, honey, and the remaining sesame oil. Toss gently to coat all the veggies in the dressing.
Cooking
  1. Heat a skillet over medium heat and add the marinated chicken. Cook for about 5-7 minutes until the chicken is fully cooked and caramelized, stirring occasionally.
  2. Heat oil in a small skillet over medium heat. Fry each wonton wrapper for about 20-30 seconds on each side until they are golden and crispy. Remove and drain on paper towels.
Assembly
  1. Spoon the cooked chicken into each crispy wonton wrapper, add a scoop of the vibrant slaw, and drizzle with sweet chili sauce for added flavor.
  2. Finish by sprinkling sesame seeds and chopped cilantro over the filled tacos to heighten the flavors and add a touch of freshness.

Notes

For extra crunch, double fry the wonton wrappers. You can experiment with additional toppings such as sliced jalapeƱos, avocado, or radishes.
