Preparation
  1. Season the chicken breasts with chili powder, garlic powder, onion powder, crushed red pepper flakes, oregano, paprika, salt, and pepper. Let them rest for about 15 minutes.
  2. In a large skillet over medium-high heat, add a splash of oil and sear the seasoned chicken for 6-7 minutes on each side until golden brown. Set aside.
Making the Cheese Sauce
  1. In a small saucepan, melt the butter over medium heat. Whisk in the flour to create a roux and cook until light golden brown, about 2 minutes.
  2. Gradually whisk in the milk, stirring until no lumps remain. Stir in additional salt, cayenne pepper, and paprika, whisking until thickened, about 3-4 minutes.
  3. Remove from heat and stir in the shredded cheddar cheese until melted and smooth.
Assembly and Serving
  1. Plate the juicy chicken and generously drizzle with the cheesy sauce. Garnish with fresh parsley or cilantro.

Notes

For a flavorful twist, try marinating the chicken in spices and olive oil ahead of time. You can also add diced tomatoes or corn to the cheese sauce for freshness.
