  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning (or a mix of basil, oregano, and thyme)
  • Salt & black pepper, to taste
  • 2 cups cherry tomatoes (or diced Roma tomatoes) Choose vibrant, ripe tomatoes for the best flavor.
  • 1 cup shredded mozzarella cheese Feel free to swap in different cheeses based on what you have at home.
  • ½ cup grated Parmesan cheese
  • ½ cup fresh basil leaves, chopped Fresh herbs are recommended for the best flavor.
  • 1 tbsp balsamic glaze (optional, for drizzling)

Method
 

Preparation
  1. Preheat your oven to 190°C (375°F).
  2. In a large bowl, combine the chicken pieces with olive oil, minced garlic, Italian seasoning, salt, and pepper. Ensure each piece is well-coated.
  3. Heat a skillet over medium-high heat and sear the seasoned chicken for 2-3 minutes on each side until golden brown.
  4. Transfer the seared chicken to a baking dish, spreading it out evenly.
  5. Top the chicken with diced tomatoes, mozzarella, and Parmesan cheese.
Cooking
  1. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted and bubbly.
  2. Remove from the oven, sprinkle with fresh basil, and drizzle with balsamic glaze if desired.

Notes

Searing timing is important for creating a crust. Adjust seasoning to taste and consider baking time and cheese browning.
