Ingredients
  

For the Chicken
  • 800 g Chicken Breast (cut into halves)
  • 1.5 Tsp Cajun Seasoning Mix Adjust according to heat tolerance.
  • 2 Tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking Using quality butter enhances flavor.
For the Aromatics and Sauce
  • 1 Medium Red Onion (chopped)
  • 4-5 Cloves Garlic (chopped)
  • 15 g Grass Fed Butter
  • 250 ml Milk
  • 150 g Light Cream Cheese Opt for low-fat for a lighter version.
  • 40 g Parmesan
Seasoning
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder
For Garnish
  • Fresh Parsley Fresh Parsley (for garnish) Can substitute with fresh cilantro or basil.

Method
 

Preparation
  1. Combine the chicken breasts with 1 tablespoon of Cajun seasoning and 2 teaspoons of olive oil in a bowl. Let it soak in those flavors overnight or for at least 1 hour.
Cooking
  1. Heat a skillet over medium-high heat and melt 25 g of grass-fed butter. Add the marinated chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Allow the chicken to rest before slicing it into strips.
  2. In the same skillet, add the chopped red onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onion is translucent.
  3. Sprinkle in the remaining Cajun seasoning and day-old rice, stirring well to coat everything with flavors.
  4. Lower the heat and add in 15 g of grass-fed butter. Gradually whisk in the milk until warmed through. Mix in the light cream cheese and Parmesan cheese, stirring until smooth and creamy.
  5. Layer your plate with the seasoned Cajun rice, topping with sliced chicken. Drizzle with the creamy sauce and finish with fresh parsley.

Notes

Allowing the chicken to rest after cooking prevents dryness. You can use day-old rice for better texture. Adjust Cajun seasoning for a milder or spicier dish.
