Main Ingredients
  • 1 pound ground beef Choose 80/20 for flavor; 90/10 works if you prefer less fat.
  • 1 28oz bag frozen cubed potatoes with onions & peppers Use straight from the freezer; if clumped, separate them.
  • 1 10.5oz can cheddar cheese soup Adds creamy depth; can use low-sodium if preferred.
  • 1 10.5oz can cream of celery soup Mushroom can be substituted; both contribute to the casserole’s body.
  • 2 cups shredded cheddar cheese Freshly shredded melts better than pre-shredded.
  • to taste seasoning Include salt, pepper, garlic powder, etc.

Method
 

Preparation
  1. Preheat oven to 350° F and grease a 9x13 baking dish.
  2. In a medium-size skillet, chop and brown the ground beef until no longer pink. Season to taste with salt, pepper, garlic powder, etc. Dab out most of the excess grease with a paper towel.
  3. In a large bowl, combine the cooked beef, frozen potatoes, both cans of soup, and half of the shredded cheese. Mix until evenly coated.
  4. Spread the mixture evenly into your prepared baking dish and sprinkle a cup or more of shredded cheese over the top.
Baking
  1. Cover with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes or until the cheese starts to brown.
  3. Let the casserole rest for 5 to 10 minutes before serving.

Notes

For variation, use plant-based ground crumbles or swap in different vegetables and cheeses. This recipe is flexible with the ingredients.
