Cilantro Lime Steak Bowls

Ingredients
  

For the Steak
  • 1 lb Juicy marinated steak (flank or skirt steak) Choose for quick cooking and good flavor.
  • 1 juice Juice of lime To marinate the steak.
  • 1 tsp Salt Season progressively.
  • 1 tsp Black pepper Fresh cracked for added flavor.
For the Rice
  • 1 cup Long grain white rice Fluffy texture or use brown rice.
  • 1 juice Juice of lime Add while mixing the rice.
  • 1 cup Fresh cilantro, chopped Add at the end for flavor.
  • 1 tsp Salt To taste.
For the Toppings
  • 1 can Black beans, drained and rinsed Canned for convenience.
  • 1 cup Corn, fresh or frozen Can also use canned.
  • 1 large Avocado, sliced Choose ripe avocados.
  • 1/2 cup Creamy cilantro lime sauce Blend Greek yogurt or cashew cream.

Method
 

Preparation
  1. Marinate the steak in lime juice, cilantro, salt, and pepper for at least 30 minutes.
  2. Prepare the cilantro lime rice by cooking rice according to package instructions and mix it with lime juice, cilantro, and salt.
  3. Drain and rinse the black beans and corn.
  4. Slice the avocado.
Cooking
  1. Cook the marinated steak on a grill or in a skillet to desired doneness.
  2. Warm the black beans and corn in a small pot on low heat.
Assembly
  1. Assemble the bowls by placing a base of cilantro lime rice, followed by sliced steak, black beans, corn, avocado, and drizzle with the creamy cilantro lime sauce.
  2. Serve immediately and enjoy your fresh and flavorful steak bowls!

Notes

Pat the steak dry before cooking for a better sear. Let it rest for 5-10 minutes after cooking for juiciness.
