Ingredients
  

Meat and Vegetables
  • 1 lb ground beef Can substitute with ground turkey or plant-based alternative.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (10.75 oz) condensed cream of mushroom soup Can use a homemade version or dairy-free alternative.
  • 1/2 cup milk
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn Fresh or canned corn can be used.
  • 1 tsp chili powder Adjust based on heat preference.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups sliced potatoes (about 1.5 lbs) Russet or Yukon Gold recommended.
  • 1 cup shredded cheese (cheddar or your preference)

Method
 

Preparation
  1. Gather all ingredients to ensure a smooth cooking process.
  2. Chop the onion and garlic uniformly.
  3. Rinse and drain the canned beans.
  4. In a skillet, brown the ground beef over medium heat until no longer pink, then drain excess fat.
  5. Layer ingredients in the slow cooker: first place sliced potatoes, then add the cooked beef, diced onion, garlic, drained beans, corn, and tomatoes on top.
  6. In a bowl, combine cream of mushroom soup, milk, chili powder, salt, and pepper, mixing well before pouring over layered ingredients.
Cooking
  1. Set your slow cooker to low heat and cook for 6-8 hours.
  2. About 30 minutes before serving, sprinkle shredded cheese on top and cover until melted.

Notes

For best results, brown the meat before adding it to the slow cooker. Adjust cooking time if using high heat. Adding cheese toward the end keeps it melty.
