Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked rice, shredded chicken, black beans, enchilada sauce, corn, cumin, chili powder, salt, and pepper. Stir well until all the ingredients are thoroughly mixed.
- Transfer the mixture to a greased 9×13 inch casserole dish, spreading it evenly.
- Sprinkle the shredded cheese over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro if desired, then serve warm.
Notes
For added crunch, sprinkle crushed tortilla chips on top before baking. Let the casserole rest post-baking to allow flavors to meld beautifully.
