  • 1 can (15 oz) black beans, drained and rinsed A fantastic source of protein that can be replaced with pinto beans if desired.
  • 1 can (10 oz) enchilada sauce A homemade sauce can elevate the flavor, but a canned version saves time without sacrificing taste.
  • 1 cup corn kernels Fresh or frozen.
  • 1 cup shredded cheese (cheddar or Mexican blend) Experiment with different cheeses for added flavor.
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • to taste salt and pepper
  • chopped cilantro for garnish Optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, black beans, enchilada sauce, corn, cumin, chili powder, salt, and pepper. Stir well until all the ingredients are thoroughly mixed.
  3. Transfer the mixture to a greased 9×13 inch casserole dish, spreading it evenly.
  4. Sprinkle the shredded cheese over the top.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  6. Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro if desired, then serve warm.

Notes

For added crunch, sprinkle crushed tortilla chips on top before baking. Let the casserole rest post-baking to allow flavors to meld beautifully.
