  • Lo Mein noodles (fresh or dried) Fresh noodles provide the best texture and flavor.
  • 1 piece red bell pepper Opt for vibrant, firm peppers.
  • 1 piece yellow bell pepper Opt for vibrant, firm peppers.
  • 2 pieces carrots (thinly sliced)
  • 2 pieces green onions (chopped) Look for fresh green onions with bright green tops.
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic Fresh garlic makes a noticeable flavor difference.

Preparation
  1. Gather all ingredients and chop vegetables into bite-sized pieces for even cooking.
  2. Prepare the lo mein noodles according to package instructions until al dente; drain and set aside.
Cooking
  1. Heat a large skillet or wok over medium-high heat. Add a splash of oil, then sauté the chicken until golden brown and thoroughly cooked, about 6-8 minutes. Remove and set aside.
  2. In the same pan, stir-fry the bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
  3. Return the cooked chicken to the skillet, add the lo mein noodles, soy sauce, sesame oil, and minced garlic, tossing until well combined.
  4. Serve hot, with extra soy sauce on the side for those who enjoy more flavor.

Notes

For meal prep, chop vegetables and marinate the chicken the night before. Store leftovers in an airtight container in the refrigerator for up to 3 days.
