Preparation
- Gather all ingredients and chop vegetables into bite-sized pieces for even cooking.
- Prepare the lo mein noodles according to package instructions until al dente; drain and set aside.
Cooking
- Heat a large skillet or wok over medium-high heat. Add a splash of oil, then sauté the chicken until golden brown and thoroughly cooked, about 6-8 minutes. Remove and set aside.
- In the same pan, stir-fry the bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
- Return the cooked chicken to the skillet, add the lo mein noodles, soy sauce, sesame oil, and minced garlic, tossing until well combined.
- Serve hot, with extra soy sauce on the side for those who enjoy more flavor.
