- In a large skillet, warm the olive oil over medium heat until it shimmers.
- Add the diced chicken, allowing it to cook for about 5–7 minutes, or until it’s nicely browned and cooked through.
- Stir in the minced garlic and sauté for about 1 minute until fragrant.
- Toss in the zucchini and bell pepper, stir-frying for 3–4 minutes until they’re tender yet crisp.
- Drizzle the soy sauce into the skillet, stir to combine, and season with salt and pepper to taste. Serve over a bed of warm rice or noodles.
Notes
This stir fry is highly customizable; add other vegetables or spice it up with sriracha for a kick.
