  1. In a large skillet, warm the olive oil over medium heat until it shimmers.
  2. Add the diced chicken, allowing it to cook for about 5–7 minutes, or until it’s nicely browned and cooked through.
  3. Stir in the minced garlic and sauté for about 1 minute until fragrant.
  4. Toss in the zucchini and bell pepper, stir-frying for 3–4 minutes until they’re tender yet crisp.
  5. Drizzle the soy sauce into the skillet, stir to combine, and season with salt and pepper to taste. Serve over a bed of warm rice or noodles.

Notes

This stir fry is highly customizable; add other vegetables or spice it up with sriracha for a kick.
