  • 1.5 lbs Boneless, Skinless Chicken Breasts
  • 2 tbsp Vegetable Oil For coating the crock pot
  • 4 oz Cream Cheese
  • 3 tbsp Unsalted Butter
  • 10.5 oz Cream of Chicken Soup
  • 3 cloves Garlic, minced
  • 0.75 cup Chicken Broth
  • 1 packet Good Seasons Dry Italian Salad Dressing Mix
  • 16 oz Angel Hair Pasta
  • Chopped Fresh Parsley For garnish
  • Cracked Pepper, to taste
  • Grated Parmesan Cheese, optional For serving

Method
 

Preparation
  1. Lightly coat the bottom of your crock pot with vegetable oil and place the chicken breasts inside in a single layer.
  2. In a medium bowl, whisk together cream cheese, cream of chicken soup, unsalted butter, minced garlic, and chicken broth until smooth.
  3. Pour the creamy mixture over the chicken in the slow cooker, covering everything, and securely cover the crock pot.
  4. Cook on low for 4 hours.
Cooking Pasta
  1. About 15 minutes before cooking time is complete, boil angel hair pasta in a pot of salted water and set aside after draining.
Finishing Touches
  1. After 4 hours, shred the chicken using two forks and mix it back into the sauce.
  2. Serve the chicken over warm angel hair pasta and sprinkle with chopped parsley and Parmesan cheese.

Notes

For even cooking, use chicken breasts of similar size or halve very large pieces before starting. If the sauce looks too thick after shredding, stir in a splash of warm chicken broth to loosen it. When boiling angel hair, watch closely since it cooks very quickly; drain and toss with a little oil to prevent sticking before plating.
