Taquito Filling
  • 2 cups cooked shredded chicken Rotisserie chicken works great.
  • 4 oz cream cheese Softened for easy mixing.
  • ½ cup shredded cheddar or Mexican blend cheese Feel free to experiment with different cheese blends.
  • ¼ cup salsa Use mild or spicy depending on your preference.
  • ½ tsp garlic powder
  • ½ tsp chili powder Can be adjusted for spice level.
  • ½ tsp cumin
  • Salt and black pepper To taste.
  • 8 small flour or corn tortillas
  • Cooking spray or oil For brushing.
  • Chopped cilantro For garnish.
  • Sour cream For serving.
  • Guacamole For serving.
  • Extra shredded cheese For serving.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine cooked shredded chicken, cream cheese, cheddar cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper. Stir until well combined.
  3. Warm the tortillas in the microwave for about 20 seconds to make them pliable.
  4. Spoon 2-3 tablespoons of the chicken mixture onto one side of each tortilla and roll tightly, tucking in the edges.
  5. Place the rolled taquitos seam-side down on the prepared baking sheet.
  6. Lightly brush the tops with cooking oil or spray with cooking spray.
Cooking
  1. Bake for 15-20 minutes, until golden brown and crunchy. Optionally, broil for an additional 1-2 minutes for extra crispiness.
  2. Serve warm, garnished with chopped cilantro, and accompanied by sour cream and guacamole.

Notes

For variations, consider fillings like black beans for a Southwestern twist or shredded jackfruit for vegan taquitos. Make sure to adjust your seasoning to taste.
