Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine cooked shredded chicken, cream cheese, cheddar cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper. Stir until well combined.
- Warm the tortillas in the microwave for about 20 seconds to make them pliable.
- Spoon 2-3 tablespoons of the chicken mixture onto one side of each tortilla and roll tightly, tucking in the edges.
- Place the rolled taquitos seam-side down on the prepared baking sheet.
- Lightly brush the tops with cooking oil or spray with cooking spray.
Cooking
- Bake for 15-20 minutes, until golden brown and crunchy. Optionally, broil for an additional 1-2 minutes for extra crispiness.
- Serve warm, garnished with chopped cilantro, and accompanied by sour cream and guacamole.
