Preparation
  1. If desired, begin by heating olive oil in a skillet over medium heat. Sear the chicken breasts for approximately 2-3 minutes on each side until golden.
  2. In your crock pot, combine the cream of chicken soup, ranch seasoning mix, chicken broth, garlic powder, onion powder, and black pepper. Stir until well mixed.
  3. Carefully place the seared chicken breasts into the crock pot, ensuring they are coated with the creamy ranch sauce.
Cooking
  1. Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fork-tender.
  2. Once cooked, shred the chicken in the pot with two forks, mixing it into the creamy sauce.
  3. Stir in the sour cream and add shredded cheddar on top if desired. Garnish with fresh parsley before serving.

Notes

For meal prep, marinate the chicken with seasoning and soup the night before. Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for 2 months. Reheat slowly on the stovetop.
