Ingredients

Noodle and Soup Base
  • 2 packs ramen noodles Whole wheat or brown rice noodles can be used for a nuttier texture.
  • 2 cups chicken broth Vegetable broth can be used for a lighter taste.
  • 1 cup heavy cream For a lighter version, use half-and-half or full-fat coconut milk.
  • 1 cup cooked chicken, shredded Rotisserie chicken is a convenient option.
Flavoring Ingredients
  • 2 tablespoons soy sauce Tamari can be used for a gluten-free alternative.
  • 2 teaspoons chili paste Adjust to taste for desired spiciness.
  • 1 tablespoon sesame oil Toasted sesame oil enhances aroma.
  • 1 teaspoon ginger, minced Fresh ginger is preferred for brightness.
  • Salt and pepper to taste Season gently to prevent oversalting.

Method

Preparation and Cooking
  1. In a large pot, heat sesame oil over medium heat, then add minced ginger and cook until fragrant.
  2. Pour in the chicken broth and bring to a simmer.
  3. Stir in soy sauce, chili paste, and shredded chicken.
  4. Add the ramen noodles and cook according to package instructions.
  5. Once the noodles are cooked, reduce heat and stir in heavy cream. Cook for another 2-3 minutes until heated through.
  6. Season with salt and pepper to taste and serve hot, garnished with chopped green onions.

Notes

To adjust the heat, start with one teaspoon of chili paste and build from there. Use warm shredded chicken to keep it tender. Whisk cream gently into the broth to maintain a smooth texture.
