Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or olive oil.
- Season the chicken breasts liberally with salt, pepper, and paprika.
- In a skillet, heat the olive oil over medium heat. Sear the chicken breasts for about 2 to 3 minutes on each side until they’re golden brown.
- Remove the chicken from the skillet, and add the minced garlic. Cook until fragrant, about 30 seconds.
- Pour in the chicken broth and let it simmer until it reduces slightly. Then, add the softened cream cheese and stir until smooth.
- Stir in the chopped chives and season with additional salt and pepper if needed.
- Place the seared chicken in the prepared baking dish and pour the creamy mixture over the top. Sprinkle with shredded cheddar cheese if desired.
- Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
- Garnish with fresh parsley before serving.
Notes
Ensure not to overcook the chicken to prevent dryness. Mix the cream cheese with the broth on low heat for a lump-free sauce.
