Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. Season the chicken breasts liberally with salt, pepper, and paprika.
  3. In a skillet, heat the olive oil over medium heat. Sear the chicken breasts for about 2 to 3 minutes on each side until they’re golden brown.
  4. Remove the chicken from the skillet, and add the minced garlic. Cook until fragrant, about 30 seconds.
  5. Pour in the chicken broth and let it simmer until it reduces slightly. Then, add the softened cream cheese and stir until smooth.
  6. Stir in the chopped chives and season with additional salt and pepper if needed.
  7. Place the seared chicken in the prepared baking dish and pour the creamy mixture over the top. Sprinkle with shredded cheddar cheese if desired.
  8. Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Garnish with fresh parsley before serving.

Notes

Ensure not to overcook the chicken to prevent dryness. Mix the cream cheese with the broth on low heat for a lump-free sauce.
