Preparation
- Prepare the chicken by patting the pieces dry and seasoning both sides with salt, pepper, paprika, and cumin.
- Heat a large skillet over medium-high heat and add the olive oil, swirling to coat the pan.
Cooking
- Add the chicken breasts to the skillet and cook 3 to 4 minutes per side until golden and mostly cooked through, then transfer to a plate.
- Reduce heat to medium and add the chopped onion to the same skillet, cooking until soft and beginning to brown, about 5 minutes.
- Stir in the minced garlic and cook 30 to 60 seconds until fragrant.
- Pour in the heavy cream and scrape the bottom of the skillet to release browned bits, letting the sauce simmer and thicken for 2 to 3 minutes.
- Return the chicken to the pan, spooning the sauce over each piece, and cook 3 to 5 more minutes until the chicken reaches an internal temperature of 165 F.
- Taste and adjust seasoning with more salt, pepper, or a sprinkle of paprika, then remove from heat and rest for a couple of minutes before serving.
Notes
For best results, use fresh ingredients and allow chicken to rest after cooking for juiciness. This dish can also be adapted for various dietary preferences.
