Preparation
- Preheat the oven to 375°F (190°C).
- Lightly steam the cauliflower, broccoli, and carrots until just tender.
- In a large mixing bowl, combine the steamed vegetables with the cheese sauce, and season with salt and pepper.
Baking
- Transfer the mixture to a baking dish and sprinkle breadcrumbs on top.
- Drizzle with olive oil.
- Bake in the preheated oven for 25-30 minutes, or until the top is bubbling and golden.
- Serve warm as a main or side dish.
Notes
Allow the casserole to rest 8 to 10 minutes out of the oven to set and make serving easier. For a golden top, switch to the broiler for the last 1-2 minutes while watching closely.
