  • 1 large onion, sliced Use yellow or sweet onions for best results.
  • 4 cloves garlic, minced Use fresh for the best flavor.
  • 1 cup beef broth Low-sodium recommended.
  • 1 cup water
  • 1/4 cup soy sauce Use tamari for gluten-free.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 6-8 pieces French rolls or hoagie bread Look for rolls with a crusty exterior.
  • to taste Sliced provolone cheese (optional) For a creamy topping.

Method

Preparation
  1. Place the beef chuck roast in the crockpot.
  2. Top with the sliced onion and minced garlic.
  3. In a bowl, mix together the beef broth, water, soy sauce, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the roast.
  4. Cover and cook on low for 8 hours or until the meat is tender.
  5. Remove the roast from the crockpot, shred it with two forks, and return the meat to the pot to soak up the juices.
  6. Serve the meat on French rolls, topped with provolone cheese if desired.
  7. Ladle some of the cooking liquid into small bowls for dipping.

Notes

For best flavor, consider reverse searing the roast before slow cooking. Adjust the seasonings and serve with classic sides like coleslaw or kettle chips.
