Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness of about 1/2 inch.
- In a bowl, combine Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, Italian seasoning, salt, and black pepper. Mix well.
- Set up a breading station with flour in one dish, beaten eggs in another, and the breadcrumb mixture in a third dish.
- Dredge chicken in flour, dip into eggs, then coat with breadcrumb mixture.
Cooking
- Heat olive oil in a skillet over medium heat. Add breaded chicken and cook for 2-3 minutes on each side until golden brown.
- Transfer to the baking sheet and bake for 15-20 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.

This recipe is versatile; you can make it vegan by swapping chicken for firm tofu and using plant-based cheese.
