Ingredients
  

For the Chicken Marinade
  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 0.25 cup olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Bowls
  • 2 cups cooked rice (white, brown, or lemon-herb rice)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 0.5 medium red onion, thinly sliced
  • 0.5 cup Kalamata olives
  • 0.5 cup crumbled feta cheese
  • 0.5 medium avocado, sliced (optional)
  • 0.25 cup chopped fresh parsley or dill (for garnish)
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 medium cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill or mint
  • Salt and pepper to taste

Method
 

Marinate the Chicken
  1. In a bowl or zip-top bag, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken and toss to coat. Marinate in the fridge for at least 30 minutes, or up to 8 hours.
Cook the Chicken
  1. Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until golden and cooked through. Let rest for a few minutes before slicing into strips or cubes.
Make the Tzatziki Sauce
  1. In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and fresh herbs. Season with salt and pepper. Chill until ready to use—flavors improve as it sits.
Assemble the Bowls
  1. Start with a scoop of rice in each bowl. Add sliced chicken, tomatoes, cucumbers, onions, olives, and feta. Top with tzatziki sauce and a sprinkle of fresh herbs. Add avocado or a drizzle of extra lemon juice if desired.

Notes

Pat the chicken dry before marinating to encourage a better sear and caramelization on the pan. Fresh herbs can quickly overpower; taste as you go.
