  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Taco Ingredients
  • 8 small tortillas Warm in a pan or microwave
  • 1 cup cherry tomatoes, halved Add just before serving
  • 1 cup cucumber, diced Salt lightly just before serving
  • 1/2 cup feta cheese, crumbled Also can use crumbled tofu for a dairy-free option
  • 1/4 cup red onion, finely chopped Great for flavor contrast
  • Fresh parsley, for garnish
  • Tzatziki sauce, for serving Use homemade or store-bought

Method
 

Preparation
  1. In a bowl, combine diced chicken, olive oil, cumin, paprika, garlic powder, salt, and pepper. Ensure chicken is evenly coated. Marinate for 5 minutes if time allows.
  2. Heat a skillet over medium-high heat. Add chicken and cook until fully cooked, about 5-7 minutes.
  3. Warm the tortillas in a pan or microwave; either use a dry skillet or wrap in a damp towel.
Assembly
  1. Assemble the tacos by placing chicken in each tortilla followed by cherry tomatoes, cucumber, feta cheese, and red onion.
  2. Drizzle with tzatziki sauce and garnish with parsley.
Serving
  1. Serve immediately to enjoy the contrast in temperature and texture.

Notes

For a vegan option, substitute chicken with marinated tempeh and use dairy-free yogurt in tzatziki. Keep toppings separate and reheat chicken gently to maintain texture.
