  • 4 cups beef broth Opt for homemade or low-sodium beef broth.
  • 8 ounces noodles (egg noodles or rice noodles) Feel free to use your favorite type of noodles.
  • 2 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean chili paste) Adjust according to your heat preference.
  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation
  1. In a slow cooker, combine the beef, broth, soy sauce, gochujang, sliced onion, carrots, bell pepper, minced garlic, grated ginger, sesame oil, and a sprinkle of salt and pepper.
  2. Give everything a good stir to mix all the ingredients thoroughly, ensuring that the beef is well-coated in the delicious sauce.
  3. Cover and cook on low for 6-8 hours.
  4. About 30 minutes before you’re ready to serve, cook the noodles according to package instructions until just tender—this usually takes about 3-5 minutes.
  5. Drain the noodles and gently fold them into the slow cooker, mixing carefully so the noodles soak up that amazing broth.
  6. Serve hot, garnished with a sprinkle of chopped green onions for a fresh crunch and a pop of color.

Notes

For best results, cut vegetables uniformly and taste the broth before serving to adjust seasoning if necessary. Cooking on low and slow is recommended for tenderness.
