  • 2 cups cooked pasta Use short shapes like rotini or penne.
  • 2 cups cooked chicken, diced Rotisserie or leftover roasted chicken speeds prep.
  • 1 cup cherry tomatoes, halved Choose firm, glossy tomatoes.
  • 1/2 cup feta cheese, crumbled Opt for block feta crumbled by hand.
  • 1/4 cup fresh basil, chopped Add last to preserve brightness.
  • 1/4 cup lemon juice Freshly squeezed gives the best flavor.
  • 1/4 cup olive oil Extra virgin olive oil preferred.
  • Salt and pepper to taste Use sea salt and freshly cracked pepper.

Preparation
  1. In a large bowl, combine the cooked pasta, chicken, cherry tomatoes, feta cheese, and basil. Gently mix with tongs or a large spoon.
  2. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper until well blended.
  3. Pour the dressing over the pasta salad and toss to combine thoroughly.
  4. Serve chilled or at room temperature, letting it rest for at least 15 to 30 minutes for best flavor.

Notes

Chill the salad briefly to let flavors meld, but avoid over-chilling which dulls aromas. Reserve a small amount of feta to sprinkle on top for a pretty finish.
