  • 4 pieces Boneless, skinless chicken breasts
  • 1/2 cup Fresh lemon juice Preferably freshly squeezed.
  • 4 cloves Minced garlic
  • 1 tablespoon Olive oil
  • 2 cups Chopped vegetables (carrots and potatoes) Can use seasonal produce.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 tablespoon Fresh thyme Use dried in a pinch, reduce quantity.
  • 1 tablespoon Fresh rosemary Use dried in a pinch, reduce quantity.
  • 1 tablespoon Fresh parsley Use dried in a pinch, reduce quantity.

Method
 

Preparation
  1. Place the boneless, skinless chicken breasts in the bottom of your slow cooker.
  2. In a small bowl, combine the fresh lemon juice, minced garlic, olive oil, salt, pepper, thyme, rosemary, and parsley. Whisk until well blended.
  3. Pour the marinade over the chicken, ensuring each piece is well-coated.
  4. Layer the chopped vegetables on top of the chicken, gently pressing them down.
  5. Cover the slow cooker and set it on low for about 6 hours or high for 4 hours.
Serving
  1. Once the cooking time is complete, shred the chicken if desired, and serve it up with the vegetables.

Notes

Marinate the chicken overnight for enhanced flavor. Adjust cooking time based on your slow cooker model.
