Method
 

Preparation
  1. Place the chicken breasts in the bottom of your slow cooker, ensuring they are evenly spaced.
  2. Season the chicken with salt and pepper, then sprinkle on the dried thyme and rosemary.
  3. Pour in the chicken broth, then layer the minced garlic and lemon slices over the chicken.
Cooking
  1. Cover your slow cooker and set it to low, allowing it to cook for about 6 hours.
  2. When done, shred the chicken in the slow cooker using two forks.
  3. Add the rice and stir it gently to combine with the chicken and broth.
  4. Cover and continue cooking on low for an additional 30 minutes.
Serving
  1. Garnish with fresh parsley and extra lemon wedges before serving.

Notes

Letting the dish sit for a few minutes after cooking allows the rice to soak up any remaining broth. Adjust seasoning if needed before serving.
