Cooking Steps
- In a large skillet, heat olive oil over medium heat. Season the diced chicken with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Remove the cooked chicken and set aside. In the same pan, add diced onion and bell pepper, cooking until softened, around 4-5 minutes.
- Stir in the rice, followed by the chicken broth. Bring to a simmer and cook for about 15 minutes.
- Add the black beans, diced tomatoes, and corn. Stir well and allow the mixture to simmer until heated through.
- Remove from heat and sprinkle cheese over the top. Serve with avocado, sour cream, cilantro, and lime wedges.
