  • 1 cup uncooked white rice Long grain white rice absorbs the sauce nicely.
  • 1 can cream of chicken soup Substitute with homemade white sauce for extra control.
  • 1 cup chicken broth Low-sodium broth recommended.
  • 1/2 cup sour cream Plain Greek yogurt can be used as a substitute.
  • 1 sleeve Ritz crackers, crushed Use toasted breadcrumbs or panko for a crunchier topping.
  • 1/4 cup melted butter Salted or unsalted butter can be used.
  • 1/2 teaspoon garlic powder Fresh minced garlic can be used for more flavor.
  • 1/2 teaspoon onion powder Finely diced sautéed onion can be added for texture.
  • Salt and pepper to taste Season gradually and taste the filling.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix chicken, rice, cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper until fully combined.
  3. Pour mixture into a greased baking dish.
  4. Combine crushed Ritz crackers and melted butter in a separate bowl.
  5. Sprinkle the cracker mixture evenly over the chicken and rice.
  6. Bake for 30-35 minutes or until rice is tender and topping is golden brown.
  7. Let cool for 5 minutes before serving.

Notes

For a vegan option, use baked tofu cubes instead of chicken and swap cream of chicken soup for a creamy mushroom sauce. Allow the casserole to cool for five minutes for easier serving.
