- Pour mixture into a greased baking dish.
- Combine crushed Ritz crackers and melted butter in a separate bowl.
- Sprinkle the cracker mixture evenly over the chicken and rice.
- Bake for 30-35 minutes or until rice is tender and topping is golden brown.

Notes
For a vegan option, use baked tofu cubes instead of chicken and swap cream of chicken soup for a creamy mushroom sauce. Allow the casserole to cool for five minutes for easier serving.
