Preparation
- Pat chicken breasts dry and cut into chunks.
- In a bowl, mix parsley, Italian seasoning, onion powder, paprika, seasoned salt, and pepper.
- Add half of the seasoning mix to the chicken with 2 tablespoons of olive oil, minced garlic, lemon zest, and juice. Marinate for 30 minutes.
Cooking
- Preheat oven to 425°F and line a baking sheet with parchment.
- Prepare carrots and potatoes and toss with 2 tablespoons of olive oil and remaining seasoning. Roast for 20 minutes.
- Add broccoli to the pan and drizzle with remaining olive oil and seasoning. Spread marinated chicken across the pan.
- Roast for another 15-20 minutes until the chicken reaches 165°F.
- Serve hot and enjoy!
Notes
Prep vegetables ahead of time and use parchment paper for easier cleanup. This dish can be served family-style from the sheet pan.
