Preparation
- Pat the chicken dry and cut into chunks.
- Mix parsley, Italian seasoning, onion powder, paprika, seasoned salt, and pepper in a bowl.
- Add half of the spice mix, olive oil, minced garlic, lemon zest, and juice to the chicken and marinate for 30 minutes.
- Preheat oven to 425°F and line a baking sheet with parchment paper.
Cooking
- Prepare carrots and potatoes, coat with olive oil and remaining spice mix, and roast for 20 minutes.
- Chop the broccoli and add it to the baking sheet with garlic after 20 minutes, drizzle with oil, and add marinated chicken.
- Roast for another 15-20 minutes until chicken is cooked through (165°F) and veggies are tender.
- Serve hot.
Notes
Patting the chicken dry ensures a good sear. Let the chicken rest after roasting for juiciness. Use a thermometer to check doneness.
