Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Opt for fresh for best flavor; frozen can be used but may require additional cooking time.
  • 1 cup long-grain white rice This variety keeps its texture well; brown rice can be substituted but may alter cooking times.
  • 2 cups chicken broth Homemade enhances flavor; store-bought is convenient.
  • 1 piece lemon, zested and juiced Fresh lemons will impart the brightest flavor; avoid bottled juices.
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method

Preparation
  1. In a slow cooker, place the chicken breasts and season with salt, pepper, thyme, and rosemary.
  2. Add the rice, chicken broth, lemon zest, lemon juice, and garlic; stir gently to combine the ingredients.
Cooking
  1. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is fluffy.
  2. Shred the chicken with two forks and mix it back into the rice for a cohesive dish.
  3. Garnish with fresh parsley before serving.

Notes

Ensure chicken is cooked through (165°F) and consider marinating for bolder flavors. Best served with salads or steamed vegetables.
