Preparation
- Preheat your oven to 375°F (190°C).
- Lightly grease a medium casserole dish with nonstick spray.
- In a large mixing bowl, combine Greek yogurt, cream cheese, garlic, salt, and pepper. Stir until blended smoothly.
- Gently fold in the shredded chicken, spinach, and artichokes until evenly incorporated.
- Add in half of the mozzarella cheese and mix until fully combined.
Baking
- Pour the mixture into the prepared casserole dish, spreading it out evenly.
- Top with the remaining mozzarella cheese and all the Parmesan cheese.
- Bake for 30-35 minutes until hot and bubbly with a golden brown crust.
- Allow to cool for about 5 minutes before serving.
Notes
For a vegan option, substitute chicken with chickpeas or lentils, and Greek yogurt and cheese with plant-based alternatives. Great paired with a salad or a light dessert like fruit sorbet.
