  • ¼ cup water
  • ½ cup ketchup Base of the sauce.
  • 1 teaspoon paprika Adds smokiness.
  • 2 teaspoons sriracha Adjust based on spice preference.
  • 2 teaspoons hot chili paste (sambal olek or substitute sriracha) For added heat.
  • ½ tablespoon chili powder
  • 2 teaspoons mustard Adds tanginess.
  • 1 teaspoon Worcestershire sauce Enhances umami flavor.
For the Chicken
  • 2 lbs boneless skinless chicken thighs Juicier and more flavorful than chicken breasts.
  • 2 teaspoons olive oil Prevents sticking and enhances flavor.
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Preparation of BBQ Sauce
  1. In a small saucepan over medium heat, add butter and onions. Cook until the onions become tender.
  2. Add garlic and cook for another minute.
  3. Stir in apple cider vinegar, water, ketchup, paprika, sriracha, hot chili paste, chili powder, mustard, and Worcestershire sauce. Simmer for about 15 minutes until it thickens.
Chicken Preparation
  1. Rub chicken thighs with salt, black pepper, and olive oil.
  2. Heat your grill to medium-low heat.
Grilling
  1. Place chicken thighs on the grill. Grill, turning every 3-4 minutes, until juices run clear and the internal temperature reaches 165-170°F.
  2. Baste chicken thighs generously with BBQ sauce during the last few turns.
Serving
  1. Let the chicken rest for a few minutes before serving to retain juiciness.

Notes

Consider marinating the chicken for deeper flavor. Serve with coleslaw or grilled vegetables for ideal sides.
