  • 1.5 lbs chicken breast or thighs, cubed Thigh meat for juicier results or breast for a leaner finish.
  • 2 tbsp cornstarch Provides a light crisp coating and helps the sauce adhere.
  • to taste Salt and pepper
  • 2 tbsp oil, divided Neutral oil with high smoke points like vegetable or canola is ideal.
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 0.25 cup Thai sweet chili sauce The backbone of the glaze.
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1-2 tsp sriracha or chili paste Adjust to taste.
  • 1 tsp fish sauce (optional) Adds umami depth.
  • 0.5 unit lime, juiced Juice of ½ lime.
Garnishes
  • to taste green onions
  • to taste sesame seeds
  • to taste cilantro
Optional Ingredients
  • 1 tsp cornstarch + 2 tbsp water For cornstarch slurry.

Method
 

Preparation
  1. Toss chicken with cornstarch, salt, and pepper.
  2. Heat 1 tbsp oil in a skillet over medium-high heat.
  3. Cook chicken until browned; remove and set aside.
  4. Add garlic and ginger with remaining oil; sauté for 1 minute.
Cooking
  1. Stir in sauce ingredients and return chicken.
  2. Simmer until thickened, about 3-4 minutes.
  3. If the sauce seems thin, stir in the cornstarch slurry until it reaches a glossy consistency.
  4. Garnish and serve with rice or noodles.

Notes

Use firm tofu as a vegetarian alternative. Cornstarch helps achieve a crisp coating.
