  • 2 tablespoons rice vinegar
  • 2 tablespoons honey Can be adjusted for sweetness.
  • 3 cloves garlic, minced Fresh garlic for the best flavor.
  • 1 tablespoon fresh ginger, grated Fresh ginger recommended.
  • 2 tablespoons cornstarch For thickening the sauce.
  • 2 tablespoons water For cornstarch slurry.
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Cooked rice (for serving) Serves as a base for the dish.

Method
 

Preparation
  1. Lay down the chicken thighs or breasts at the bottom of the slow cooker, ensuring an even layer for optimal cooking.
  2. In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, minced garlic, and grated ginger until well combined.
  3. Layer the sliced red bell pepper, yellow bell pepper, and onion on top of the chicken.
  4. Pour the sauce over the ingredients in the slow cooker and cover with the lid. Cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, create a slurry by mixing cornstarch and water in a small bowl. Stir it into the slow cooker.
  6. Once thickened, serve this sweet chili chicken over cooked rice and sprinkle with green onions and sesame seeds.

Notes

This dish is flexible; serve it in lettuce wraps or with crunchy vegetables. For a milder flavor, reduce the sweet chili sauce and increase honey.
