Preparation
- In a mixing bowl, combine mozzarella, feta, spinach, tomato, red onion, and black pepper. Mix until well combined.
- Lay one tortilla flat and spoon one-fourth of the filling mixture onto one half. Fold the tortilla over.
Cooking
- Heat a non-stick skillet over medium heat and add olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes, until golden brown.
- Flip the quesadilla and cook for another 3-4 minutes until both sides are crispy.
- Remove from heat, slice into wedges, and serve warm.
Notes
Keep tortillas warm while assembling to prevent cracking. Pat diced tomato on paper towel to remove excess moisture.
